I live for a fresh batch of greasy fries, but sometimes I find myself nauseous after finishing, and looking down at my food baby in despair. I think it’s easy to forget that food is fuel, and we need it to properly energize our bodies. And french fries aren’t always the food to properly do that. (Okay, maybe they’re never the food to properly do that)

Sure, some places offer salads, or “healthy options”, but those options usually make me sad. There’s nothing worse than a bland salad from a burger joint, am I right? Crunching on tomatoes and watery lettuce is heartbreaking as you watch your friends dip everything in sight in their milkshakes. And when you’re drenching the salad in fattening, sugary dressing you might as well be drinking your friends milkshakes!

Must we sacrifice nutrition for flavor? Where’s the balance?

What exactly is an aubergine? An eggplant! Bet you didn’t know that one. Aubergine and Company was founded in 2014, by a couple with Brazilian roots who loved healthy eating, and believed that it should always taste delicious. Their end goal is to make you feel good. After enjoying their food I must admit: mission accomplished! I had the pleasure of interviewing their daughter, and Head of Marketing and Catering, Julia Lawlor.

Chloe: Growing up, did you eat a lot of food that's similar to what they serve at the restaurant?

Julia: Similar, but we didn't eat very healthy growing up.

C: What does your family do for fun on your days off?

J: Spend time in nature, watch movies, and enjoy good conversation. And we love to eat!

C: Does every location have the same menu? Does your menu ever change?

J: Yes and yes - we add new products every season.

C: How do you guys stay inspired and passionate?

J: We believe in a healthy lifestyle, and it's easy to be passionate when you are doing something good and helping the community live better lives. We want to improve the health of the world through better eating. The best part is that it tastes amazing.

C: What's your favorite part about being a part of a successful restaurant?

J: Hearing stories of how people have been able to feel better, lose weight, have options to eat when they are allergic to certain food items because of what they eat at Aubergine and by following our principles at home (no sugar, no fried food, good fats). Since we don't believe in diets, calorie counting, or trendy programs, we help make healthy living easier, more convenient, and more enjoyable.

C: Are all of your ingredients fresh?

J: Yes! No canned products at all, most products are made from scratch daily.

C: Where do you get ingredients, and what is important to you when choosing ingredients?

J: Local vendors and nation-wide vendors. We choose the best ingredients we can and we look for products that are organic when possible, sugar free and with no preservatives. We also choose products that have no sugar added to them. For example, our acai has no juice or added sugar, it's pure fruit.

Healthy eating doesn’t have to be hard. Living a healthy lifestyle doesn’t have to include you counting calories or stressing about fats. At Aubergine and Company they believe in serving healthy fats, fresh ingredients, and then enjoying it!

Their Sugarhouse location has been around for about 8 months, and we’re kicking ourselves for not trying it out sooner. The space has a clean, modern design. You feel healthy just hanging out here and it’s the perfect spot to catch up with friends, or to catch up with Harry Potter. (Anyone else reading Harry Potter and the Cursed Child right now?)

Ok let’s talk about the food I ate. Here we have the Dream Salad:

This is their most popular chopped salad, and I can definitely see why. Fresh romaine and spinach topped with chicken, red onions, apples, walnuts, parmesan cheese, basil, grape tomatoes, red and green peppers. They recommend topping with their Cilantro Jalapeno salad dressing, which is a recommendation you should definitely listen to!  Quite the ingredients make quite the salad! For someone who loves food so much, it’s embarrassing how poorly I handle spicy foods, especially jalapeno. But this dressing only has a slight jalapeno taste, balanced with a creamy cilantro flavor. Not too spicy, and full of flavor! The meat is another important part of this masterpiece. I often find myself chewing, chewing, and chewing the chicken I order from restaurants. Chicken should not be dry, and our friends at Aubergine understand that. Their chicken is fresh, tender, and perfectly moist! I’m a huge fan. You can taste the freshness of the ingredients as you happily crunch on your salad. 

Are you in a real Mediterranean mood? They have delicious options to create your own Mediterranean sandwiches with fresh pita bread, or a make a delicious salad. Too stressed to pick ingredients yourself? Try their signature Baked Falafel Salad, it’s absolutely delicious. Also vegetarian!


For all you with a sweet tooth, I’ve got the perfect thing to replace your fast food smoothies. The Acai bowl. We wrote about Aubergines bowls a couple months ago, and here we are coming back for more. The acai berry is a small, dark purple fruit grown in Brazil. Did you know Aubergine and Company uses acai pulp straight from Brazil? Pretty authentic. They are not only pretty, but delicious and chock full of health benefits. Not only will your tastebuds be satisfied, but your heart and skin will be thanking you too! No wonder it’s considered a superfood. The most popular Acai bowl here is the Classic Brazilian, which is absolutely delicious. A blend of acai, bananas, and agave is mixed up and topped with house made granola, banana, strawberries, and blueberries. The granola is extremely fresh, and makes the most perfect crunch of sweetness. The only added sweetener is agave, which is all natural. But the bowl doesn’t taste bland or artificial. The agave has a rich sweetness that makes this bowl taste just like dessert. 

You can always add some nourishing ingredients to really make your bowl. They can add protein, bee pollen, hemp seeds, carob chips, almond butter, greens, and more! Why not make your bowl even more healthy?
